Falafel with Tahini Parsley Sauce and Sumac Red Onions

This refreshing recipe is created by our amazing culinary team to pair perfectly with our 2023 Davis Estates Lily Fleur. Hurry and try this pairing at home!

Ingredients

Falafel
yields 14

120 grams Canned Garbanzo beans
120 grams fava beans
60 grams finely diced onion
10 grams of minced parsley
10 grams minced cilantro
3 grams ground coriander
3 grams ground cumin
5 grams minced garlic
40 grams chickpea flower
4 grams salt
4 grams baking powder
1 gram baking soda

Tahini Parsley Sauce
110 grams tahini
55 grams of water
25 grams lemon juice
1 gram salt
8 grams minced parsley
2 grams minced garlic
Pinch cayenne pepper

Sumac Red Onions
1 tablespoon canola oil
3 red onions, sliced
2 tablespoons sumac
2 teaspoons ground cumin
Salt and pepper to taste

METHOD

Falafel
Combine the above ingredients in food processor and puree to desired consistency.
Preheat fryer to 350°.
Shape into golf ball size patties and fry for 5-7 minutes.

Tahini Parsley Sauce
Combine the above in a bowl and whisk until homogenous.

Sumac Red Onions
In a large sauté pan over medium heat add oil, onions, sumac, and cumin. Cook until soft, stir to prevent browning.
